Pancakes with coconut oil

INGREDIENTS (for about 10 pancakes)

130 g of flour (or 80 g flour + 50 g of coconut flour)

2 whole organic eggs

2 tablespoons of sugar (you can replace them with 2 tablespoons of honey to your liking)

6 tablespoons of liquid coconut oil

2 pinches of salt

½ teaspoon of baking soda

100 ml of milk (including vegetable)

Cinnamon q.b
NB: At your convenience, you can add berries (excellent blueberries) or chopped chocolate and vanilla extract to the dough.

METHOD

Preparation time: approximately 15 minutes

In a comfortable bowl, beat the egg with the sugar, coconut oil, for at least a couple of minutes

(previously brought to the liquid state at room temperature) and salt

Add the flour, milk, cinnamon and, finally, the baking soda a little at a time: mix until a smooth, lump-free mixture is obtained.

After letting the dough rest for 2-3 minutes, stir again until it is completely smooth.

Grease evenly a hot non-stick pan with half a teaspoon of coconut oil.

Pour a ladle of dough on the pan and distribute it until you get a disc the thickness of a finger

At medium heat, cook for about a minute, turn the pancake and cook on the other side.

Arrange the pancakes on each other on the plate and garnish them to your liking with maple syrup, honey, icing sugar and all that your imagination suggests!
